Chicken, Orange & Walnut Salad

2 servings

10 minute prep; 10 minute cook

Ingredients required:

For the dressing:

• 3 tbsp. of honey
• 2 tbsp. mustard
• 1 tbsp. olive oil
• 1 tbsp. lemon juice
• 2 tbsp. orange juice
• ⅓ tsp. cinnamon

For the salad:

• 7 oz. (200g) chicken breast 
• 4 handfuls rocket 
• ¼ iceberg lettuce
• 1 orange
• ⅓ pomegranate fruit, seeds
• ¼ cup (30g) pecans, roasted 

Instructions:

1. Peel orange and cut out the pulp and set aside. Squeeze the juice from the rest of the orange and keep it for the sauce.
2. Mix the ingredients of the dressing in a cup, season with salt and pepper.
3. Cut the chicken breast into 4 smaller pieces, season with salt, coat with olive oil and place on a hot grill pan — grill for 4 minutes on both sides.
4. Drizzle the chicken pieces with a tbsp. of dressing and continue to grill for about 1.5 minutes on a slightly lower heat. Turn over then drizzle with another tbsp. of dressing, and grill for another minute. Remove from the pan and set aside. Once cooled slightly slice into pieces.
5. Mix the salad leaves and divide it between two plates, then top with the orange and chicken. Sprinkle with the pomegranate seeds and roasted pecans. Drizzle with the remaining dressing and serve.

Strawberry Sauce Parfait

4 servings

10 minute prep; 0 minute cook

Ingredients required:

• 1 cup (145g) strawberries
• 2 tbsp. honey
• 1 tsp. vanilla extract
• 1 ¾ cups (500g) Greek yogurt
• 2 servings Honey Granola with Cherries & Walnuts
• 1 cup (150g) blueberries

Instructions:

1. Place the strawberries into a small bowl and mash the strawberries with a fork. Add the honey and vanilla extract and mix well.
2. Divide the mixture equally between four glasses, spoon over the Greek yogurt. To serve, top with granola and blueberries.

Chicken Fried Rice

2 servings

10 minute prep; 20 minute cook

Ingredients required:

• ⅔ cup (120g) basmati rice, raw
• 1 tbsp. coconut oil
• 10 oz. (280g) chicken thigh, diced
• salt & pepper
• 3.5 oz. (100g) shiitake mushrooms, sliced
• 1 tbsp. root ginger, grated
• 1 tbsp. sambal oelek
• 2 garlic cloves
• 1 cup (100g) green beans, chopped
• 4 green onions, sliced
• 2 tbsp. tamari
• 4 tbsp. ketjap manis
• ½ lime, zested & juiced
• 3 tbsp. salted peanuts, chopped

Instructions:

1. Cook the rice according to instructions on the packaging.

1. Meanwhile, heat the coconut oil in a large skillet over a high heat. Add the chicken, season with salt and pepper and stir-fry for 6-7 minutes until the chicken is golden brown.

2. Add the sliced mushrooms and continue cooking for a further 3-4 minutes. Next, add the grated ginger, sambal, garlic, green beans and half the green onions to the pan and cook for 2 minutes, stirring frequently, then lower the heat to medium.

3. Once everything has cooked, stir through the cooked rice and sauté for 1-2 minutes. Remove the pan from the heat and stir in the tamari, ketjap manis, lime zest, and lime juice.

4. To serve, divide between 2 bowls and sprinkle over the peanuts and remaining green onions.
